APRIL…the appetizer to summer

So we finally made it! …April is actually on the brink! And even though March winds can lead to April showers, we are definitely approaching the entré of summer.  So with spring and joyful entertaining in mind, we bring you a favorite quick, easy, and versatile appetizer that is based on our Feature Cheese:  Parmigiano Reggiano.

 

Poppy Seed Parmesan Crisps

These are light as a feather crisps that can be served flat, rolled, or in a cup shape (to fill with your favorite tomato/ red pepper/ basil mix).  To shape, simply transfer immediately from the oven to a rolling pin (for rounded), or press lightly into a muffin tin (for a cup). They will firm up very quickly.

Makes fourteen 8cm crisps

  • 1 cup finely shredded Parmigiano Reggiano
  • 1 teaspoon poppy seeds (or cumin, or fennel seeds)

Heat oven to 375° F. Cover a large baking sheet with parchment paper. Place 1-tablespoon of cheese on the parchment and spread lightly with your fingertips to shape an 8cm round.  Top with a pinch of poppy seeds.  Repeat to make more rounds, leaving  3cm between each.

Bake crisps until lightly golden (approximately 5 to 6 minutes…avoid browning or the cheese and seeds will turn bitter).  For flat crisps, transfer to a flat surface. To shape use a thin metal spatula to remove from the paper and drape on desired mold.
