Stilton
One of the United Kingdom’s most famous cheeses is Stilton, and considered the best of the Stiltons is the variety produced by Colston-Bassett. For a blue, it has a fairly moist, straw-yellow interior with a natural rind that is dry, rough, and crusty. The piercing holes are quite visible. The flavour is earthy, spicy, mellow and deep with a hint of walnut and a mineral finish that truely reflects its terroir.
How to Enjoy:
Enjoy Stilton with a savoury accompaniment…olives and flatbreads work nicely for a pre-dinner cheese board, or pair with figs or pears for a memorable dessert plate. It is also amazing crumbled on a salad or root vegetable soup.
