Gorgonzola PDO

Gorgonzola has a distinct musky aroma and a slightly sharp yet sweet interior that holds a pleasant spicy finish. To mature, this cheese is encased in a wide belt of thin slated wood where it develops a sticky white rind overlaid with orange and brown. The interior is ivory white and almost translucent,  appearing paler than other blue vein cheeses.

How to Enjoy:

Stir into steaming pasta with a little cream and toasted pine nuts…toss into a salad…or enjoy in its true form with a simple drizzle of honey on top.  Easy to match, choose a sweet wine…red or white… or even a rose.
