Zoey

Hailing from the 100 acre Lenberg Farm near Lindsay, Ontario, this cheese is made from a lovely blend of goat and sheep milk. It debuted in 2015 and has since won numerous awards including a hat-trick at the 2016 Canadian Cheese Awards: Best Blended Cheese; Best Mixed Rind Cheese; and Best New Cheese.

The curds are first separated, placed in forms, and self-pressed and then are hand salted and washed with a brine. They are finally placed in unique aging rooms where they are washed and flipped at regular intervals for four months. At this maturation point, Zoey presents a harmonious balance between sweet and tang reflective of the milk sources. The paste is firm with a rich buttery texture and woodsy flavours of grass and nuts.

How To Enjoy:

Zoey is perfect on the cheese board with fresh apricots or pears. Alternatively, melt on top of your favorite cured meat to create an exquisite panini. It pairs nicely with a Chardonnay or Zinfandel.
