Victor et Berthold

This is a semi-soft cheese that gets its name through dedication to the cheesemaker’s Grandfather and Uncle who began the tradition.  It is made from unpasturized cow’s mild.  The aroma is of butter and earth while the flavour develops barn-like notes as it matures.

How To Enjoy:

Excellent on its own or melted on grilled vegetables. Pairs nicely with a Pinot Noir or other fruity red.  Matured, it can be matched with a tawny Port.
