Topo is a firm, smooth, textured cheese from the Azores Islands of Portugal. Considered a pasturized  version of Sao Jorge, the flavor profile is quite similar… clean, grassy notes, but with a slightly meaty, buttery finish and a very slight bite on the end.

How To Enjoy:

Perfect on the cheeseboard or in your favorite recipe as a substitute for cheddar. Serve with a Port or Vino Verdhe.
