Tiger Blue

As named, this Canadian blue cheese has a definite bite! It’s interior is richly veined and almost marbled in appearance as a result of the unique weekly ritual of flipping and piercing.  (Most blues are pierced only once to aerate and allow the blue mold to grow in the typical tracks or veins).

How To Enjoy:

On the cheeseboard, Tiger Blue is a blue aficionado’s delight.  It works beautifully in an arugula salad or on a barbequed burger or steak.  While port is a classic pairing with blues, a Canadian icewine makes a magnificent pairing, as do fruit ciders and sweet late harvest wines.
