This is a lovely and classic melt-in-your-mouth goat cheese from central France. It is AOC protected and production today continues by traditional artisan methods.  Each small puck-sized round is coated with ash on which much desired bluish -grey mold develops.

How To Enjoy:

Selles-sur-Cher has a firm but soft texture. Taste is a combination of sour -salty-sweet. It is absolutely superb on the cheese board, and divine with a leafy green salad. Pair with your favourite extra-dry white or perhaps a light and fruity red of Touraine such as Chinon.
