Sao Jorge DOP

This cheese is based on a Gouda-type recipe that dates back to the 15th century.  On the island of Madeira, the cows graze leisurely in pastures that are salty and abundant with grass. This gives this cheese its clean bouquet, and later, a strong spicy flavour. The texture is hard and crumbly. Some say it is akin to a cross between a cheddar and a gouda.

How to Enjoy:

Sao Jorge is a fine addition to a cheeseboard where the subtle grassy tones are highlighted. This cheese serves nicely with some plump grapes, or with fresh or preserved pears. It also makes for a lovely fondue.  Serve with your favourite Portugese wine.
