San Simon da Costa DOP

This cheese appears as a lovely golden-copper coloured tear drop shape.  It is traditionally pressed by mold into this shape, and then is smoked lightly over birchwood.  It hails from the northwest Galicia region, north of the Spanish border to Portugal.

The paste of this cheese is smooth and semi-soft with a buttery and meaty smoked aroma.  The flavour expresses a light saltiness and a continuation of bacon and ham.  There is slight sweetness in the finish.

How To Enjoy:

San Simon is excellent as a melting cheese, adding depth to pasta or vegetables.  Delicious with a young and lightly fruity wine.  As in Spain…. Enjoy with some nuts on the side!
