This is an excellent choice both for those who are beginning to appreciate blue cheese and for those who are looking for an interesting blue option. This is a farmhouse blue made by les Fromagiers de la Table Ronde and uses raw cow’s milk from the cheesemaker’s own herd. It has a naturally bloomy, mottled rind which gives it a rather outstanding and unique appearance.  The aroma is mild and woodsy, and the paste is firm in body. The flavour is that of mushroom, earth and caramel balanced nicely with the mildly piquant blue veins.

How To Enjoy:

Great in a salad, on a steak or meat dish, and with fresh figs. A nice, sweet white such as a Vouvray will work well, as will the classic Port or ice cider.
