Quader de Cavra

This interesting goat’s milk cheese is from the Lombardia region of Italy.  It is made in the ways traditional to the iconic Taleggio and aged for 35 days in square pinewood crates. It is a washed rind cheese that concentrates the typical taste of the goat milk.  This cheese won bronze at the World Cheese Awards in 2013.

How To Enjoy:

Quader de Cavra is very much a conversation piece on the cheeseboard… tall with a stark white interior paste and rustic rind, it adds Old World elegance to any setting.  Pair with fresh fruit such as pears, apricots, or figs.  Matches well with Pinot Nero or Asti Spumante.
