Pecorino Toscano PDO

This is another ancient Italian cheese dating to the Roman times.  As the wheels age, this cheese is rubbed with olive oil giving it a yellow or brownish-yellow rind.  The paste is milky sweet in taste with nut and caramel notes developing with age.  There can be a mildly peppery finish.

Eat with a lettuce or chicory salad, or enjoy on a crisp flatbread.  At a more mature age, it can be used grated in place of a more traditional grana cheese. Pair with a Valpolicella Ripasso, a Merlot of choice, or if white is preferred, a Verdicchio or Sauvignon Blanc.
