Pecorino Sardo PDO

Pecorino Sardo is made on the island of Sardinia from the milk of sheep herds that are free grazing and not housed in barns. It is made in two forms – ‘Dolce’ which is young and elastic with buttery and floral notes; and ‘Maturo” which is hard and more intense with pleasantly spicey, floral and meaty notes.

How To Enjoy:

Both Pecorino Dolce and Maturo are excellent with pasta (and in particular with Sardinia’s local ‘culingiones’… a ravioli style pasta with ricotta and herbs), and as a nibbler with a glass of Dolcetto (di Dogliani).
