Ossau-Iraty AOC

This cheese takes its name from the Valley of Ossau and the forests of Iraty.  It has a sharp, sweet and nutty taste with an earthiness that is more apparent in the cheese made during the winter.  Made from the summer season milk the Ossau-Iraty will have more floral, grassy notes.

How to Enjoy:

Traditionally this cheese is paired with local black cherry jam (itxassou), but is also excellent shaved on grilled vegetables.  Serves well with Tannat (Madiran).
