Mimolette

This cheese originated in the Netherlands but has been made in France since the 17th Century.  The round craggy grey rind reveals a hard, flaming-orange interior thanks to the addition of vegetable source annatto.  The flavour of Mimolette starts relatively mild becoming stronger with age.

How to Enjoy: 

This cheese is very nice as an appetizer.  It adds a burst of colour on the cheese board or can be grated to add some flavour zest to savoury dishes. Commonly served with beer or port, it also pairs nicely with a light and fruity wine such as Cote de Beaune.
