Lindsay Clothbound Cheddar

Hailing from Mariposa Dairy near Lindsay, Ontario, this 100% goat milk handcrafted cheddar has won multiple awards inclusive of : Champion- British Empire Award 2011, and 1st place- Goat Cheese – American Cheese Society Awards 2011.  It is made in the Old World fashion by wrapping the cheddar wheel with cheesecloth.  Each wheel is placed on a pine board and turned weekly.  At 12 – 18 months this cheese exhibits delightful nutty, fruity/citrus and caramel/sweet undertones with a bery complex and lingering finish.  It has some crumble and crystallization providing a very desirable texture in the mouth.

How To Enjoy:

This cheddar will certainly contend for star status of any cheeseboard.  It works well in any recipe requiring a cheddar, melts well in your panini, and tops grilled veggies with definite pizzazz! Versatile with wines, a Cabernet Sauvignon or Reisling works nicely… perhaps choose from Niagara to akin the terroir.
