Ile-aux-Grues Cheddar

Ile-aux-Grues hails from a very distinct region along the St Lawrence River in Quebec.  A naturally aged cheddar, this cheese delivers balanced clean layers of sharp – to fruity –  to salty.  There are some characteristic protein crystals in the five year and older versions, yet it maintains a smooth melt-in-your-mouth texture.

How To Enjoy:

Serve in your favourite cheddar recipes… don’t be surprised if this one becomes your preferred choice!  Goes well on its own, and very simply with a crisp slice of apple. A bigger wine makes a better match.  Go for reds of Cabernet Sauvignon blends, Pinot Noir, or  Gewurztraminer if white is preferred.
