Highland Blue

Back Forty Artisan Cheese in Lanark County, Ontario makes this handcrafted blue cheese.  The raw milk comes from their East Friesian sheep herd.  The paste is ivory coloured with lovely long blue-gray veins and a rustic rind.  The flavour starts with a sweet note, then moderate tang and some added salt and apple notes on the finish.

How to Enjoy:

Highland Blue can present beautifully on the cheese board and is exquisite with a drizzle of honey or local maple syrup.  This cheese can also be a surprisingly delicious add-on to your toasted BLT.  A sweet icewine or late harvest wine will provide a lovely contrast to the salty blue tang.
