Feta

Hailing from Greece’s steep rugged hills and rock strewn pastures, this cheese has been recorded in Greek Mythology.  Firm and compact yet easily crumbled, it has no rind but shows numerous small holes in the interior.  It is usually found in small blocks with a little brine.  Fresh flavour with an herbal touch and a salty finish.

How to Enjoy:

Crumbled on salads, with raw or cooked vegetables, and in traditional Greek cheese and spinach pies. (Hint- if you find feta too salty, soak a chunk in cold water for 10 minutes prior to use). Very terroir appropriate with a Greek wine.
