Cusie Castagno
A signature of the Beppino Occelli collection, Cusie is made with either a combination of cow & goat, or, cow & sheep milk from herds that are free to pasture in summer. It is aged in ancient cellars for up to 24 months, and is hand turned almost daily on a series of different wood sourced boards. This lends complexity and a nutty, woodsy note which complements the mild yet sweet bite of the mature round.
How To Enjoy:
Crumbled on baked potatoes or pasta, melted on a panini of choice, Cusie is exceptional! Given the layers and sophisticated nuances, however, it is best recommended to enjoy Cusie simply on its own. Choose a fine red Nebiola or Pinot Noir or perhaps a fine dark specialty beer to complement.
