Clandestin

This cheese is made from a blend of cow and sheep milk.  The aroma has a hint of barnyard which opens up into taste sensations of straw and grass with a slight salty finish.  This is a washed rind cheese with a light, thin rind and a velvety smooth interior.

How to Enjoy:

Very lovely on the cheese board, or with a thin slice of crusty sourdough bread.  It melts easily and forms a delicious river on vegetables…especially warm potatoes.  A crisp white Canadian or French wine goes well, as does a Merlot.
