Sweet pasturized goats milk is the essence of this surface ripemed aged cheese. It is created by Fifth Town Artisan Cheese in Picton, Ontario and has achieved several top honours in Canada and the US. The paste of Cape Vessey is pure white under the striking yellow rind. It is dry and pleasantly nutty in flavour with a hint of lemony goat tang.
How To Enjoy:
This cheese makes a great addition to the cheese board both for its lovely appearance and for its added conversation (as aged goat cheeses are reatively new in Canada). Serve with a Prince Edward County dry white for a real terrior matchup, or a French Chardonnay for a pleasant complement.
