Bonne Chere

This cheese has a textured brown rind that is the result of charring the exterior over an open flame before aging.  This adds a rich toasty flavour that compliments the semi-firm fruity interior.  The pretty name is taken from the Bonne Chere River and caves of the Ottawa Valley.

How to Enjoy:

Lovely on its own as a snack and very eye-catching on the cheeseboard.  This cheese goes well with a light fruity Chardonnay to complement and contrast the smokey undertones.
