Blue 61

This intense blue cheese is washed in fine Raboso Passito wine and then covered in red cranberries.  It exudes scents of cherry, wine, and notes of raisin and vanilla.  It has a soft creamy interior. A truely unique blue cheese. (’61 was the year the cheese maker proposed marriage and thereby named his blue cheese innovation).

How to Enjoy:

A real conversation piece on the cheeseboard, it is an extremely popular addition for the holiday season and beyond. Very complementary served with an Italian Raboso wine.
