Bleu d’Elizabeth

Bleu d’Elizabeth, from Fromagerie du Presbytere in Quebec, was the winning blue cheese at the 2015 Canadian Cheese Grand Prix and the 2016 Canadian Cheese Awards. It has a natural spotted rind and beautiful blue-green veining.

How To Enjoy:

Tasting yields mild fruit and earth nuances behind the balanced salt and spice. Contrasting and beautiful on the board, it serves nicely with ripe fresh figs or a tiny drizzle of honey. Pair with a favourite tawny port or ice wine from Niagara.
