Beaufort AOC

Beaufort is a classic among classics.  It embodies everything that is traditional and magical about cheese. Dating back to the 14th and 15th centuries, and now controlled by the AOC, the raw milk must come only from the Tarentaise and Abondance cows which pasture in the summer Alps (hence Beaufort d’Alpage d’ete) and eat hay cut from the same pastures during winter (thus Beaufort d’Hiver). The rounds are huge (20 – 70 kg) with concave sides, each requiring the supply from thirty five or more cows. A green band marking encircling the round indicates the highly prized and most desired summer sourced cheese.

How To Enjoy:

Beaufort is aromatic, rich, sweet, nutty, and beautifully complex. It is semi-hard but melts in the mouth. Rather than using for any culinary purposes, it is highly recommended that this cheese should be savoured on its own in order to fully enjoy the glory of it. The rich sweetness is excellent with Champagne as well as pairing nicely with Chardonnay. A quality Pinot Noir is a perfect red wine complement.
