Asiago PDO

Asiago is produced in two types: the semi-soft Asiago Pressato (from the low lying pastures), and the hard Asiago d’Allevo (of the mountain pastures).  The Pressato is aromatic and fairly salty while the Allevo is drier with a more savory taste.

How to Enjoy:

Wonderful table cheese for any time of the day;  very nice with a rustic Italian bread.  It pairs perfectly with a Cabernet Sauvignon from Friuli.
