Avonlea Clothbound Cheddar

This cheese is made in Charlottetown on Prince Edward Island using traditional clothbound cheddar techniques.  It is aged 12 – 18 months as a tall 8 kg. wrapped cylinder.  Under the cloth, the cheese bears the fabric impressions on the rind.  The aroma is of fruit and nuts, and the taste hints at potato and lingering herbs.  It is relatively dry and crumbly due to the aging.

How to Enjoy:

This cheese is wonderful on a classic grilled cheese sandwich, melted on mashed potatoes, or along side a slice of warm apple pie.  Serves well with an ale of choice or a red Merlot.
